Honey Flapjack

225g butter , plus extra for the tin

75g caster sugar

4 tbsp honey

350g porridge oats

Treat yourself to these easy honey flapjacks for elevenses or the afternoon slump. Perfect for picnics, packed lunches and bake sales

Method

STEP 1

Heat the oven to 180C/160C fan/gas 4. Butter and line a 30 x 15cm rectangle tin with baking parchment. Melt the butter, sugar and honey in a pan over a medium heat, stirring frequently until the butter has melted and the mixture is smooth.

STEP 2

Put the oats in a mixing bowl, then pour over the butter and honey mixture. Stir until all the oats are coated. Tip into the prepared tin, and use a spatula or the back of a spoon to evenly spread out the mixture. Cook for 10-15 mins until lightly golden. Leave to cool in the tin, then remove before cutting into squares.

Spiced honey drizzle cake

Ingredients

100g salted butter , plus extra for the tin

100g light brown soft sugar

100g runny honey

1 large egg

100ml milk

1 tsp mixed spice

½ tsp ground ginger

150g self-raising flour

For the glaze

25g salted butter

25g runny honey

Prep:15 mins

Cook:45 mins

Plus cooling

Enjoy this fabulous honey cake made with mixed spice and ginger and a lovely honey butter drizzle topping. It's ideal for afternoon tea or elevenses

Method

STEP 1

Heat oven to 180C/160C fan/gas 4. Butter and line a 900g loaf tin with baking parchment. Beat the butter and sugar with an electric whisk until creamy. Whisk in the honey, egg, milk, spices and a pinch of salt (don’t worry if it curdles slightly, it will become a loose batter), then fold in the flour.

STEP 2

Tip into the prepared loaf tin and bake for 45 mins until a skewer inserted in the middle comes out clean. Leave the cake to cool for 10 mins, then transfer to a wire rack to cool completely.

STEP 3

For the glaze, melt the butter and honey in a small pan until smooth. Leave to cool until thickened, then drizzle over the top of the cooled cake. Leave to set before serving.
